Hi, welcome to another keto recipe Friday (even if it’s not Friday for you lol). Every Friday this blog shares a keto friendly recipe. I am on a weight loss journey and have decided to give keto another try. The first time I lost over 70 pounds with keto, but life happened, and I regained about 40 pounds. Today is another a savory classic comfort food. If you’ve read the other recipe posts, I’m sure you’ll notice I am big on comfort food, I am from the south after all lol. Meatloaf is one of my all-time favorites. I can’t make my normal recipe while on keto, so finding a keto version was a must, especially in the fall. There is just something so comforting about a big ol pan of meatloaf and a side of mashed potatoes in the cooler months, ya know?
I use sugar free BBQ sauce instead of ketchup, but did not know if people would be for or against that. Both are great. I also use half a block of Velveeta cheese cut into smaller squares. Just be mindful of how much you put in because it can kick you out of ketosis if too much Velvetta cheese is consumed.
